When I visited Santa Fe ten years ago, we visited Santuario de Chimayo, a religious pilgrimage undertaken by thousands. On our way back to our condo, we stopped at a local restaurant. The chef/owner welcomed us and recommended his huitlacoche (corn smut) sauce. It was fabulous!
