Melt chocolate, add some organic cream, vanilla, and monk fruit sweetener, put into greased ice cube tray, add coconut mixture and freeze. Store in fridge.

For the coconut mixture I used unsweetened coconut and made a simple syrup using monk fruit sweetener and a touch of xanthan gum.

It all turned out delicious!
