I was vegan for a while and hated every minute. The flavors weren't the comfort flavors of most of my life, and I'm not a huge fan of a diet of nothing by Mediterranean or Mexican flavors. Nothing against having them once in a while, but not all. the. time!
I am limited in what I can eat as I have to eat a low oxalate diet. That means no nuts, beans, potatoes, spinach, eggplant, okra, and a bunch of other stuff too numerous to list.
But, the fruit and veggies I can eat, I love!
