Before I go any further, let me just say that I am a strong proponent of using fermented foods to support gut health, and love a lot of what you've said here.
Having said that, your section on Neu5Gc makes it sound like the science has spoken, and it most definitely has not. For further info, here is a link to a great article discussing much of the research, which is in its infancy.
